Ginger Key Lime Cheesecake Bites

This was originally taken from the food blog Let's Dish. It was part of a Pinterest Challenge I did a year ago where I would try out recipes found on Pinterest. I changed the recipe by adding ginger, but everything else is credited to the original food blog post.

Ingredients for Ginger Key Lime Cheesecake Bites

  • 3/4 cps of graham cookies
  • 3 Tablespoons of melted butter 
  • 8 ounces soft cream cheese
  • 1 (14 onces) sweetened condensed milk
  • 1/3 cup bottled lime juice 
  • 1 teaspoon fresh ginger
  • 1 teaspoon lime zest
  • 1 (8 oz) container of frozen whipped topping, thawed 

Preparation

Line 12 muffin pan cups with paper liners. In a small bowl combine graham crackers crumbs and melted butter. Press one spoon of crumbs into the bottom of each liner.

With an electric mixer on medium speed beat the cream cheese until smooth. Add the condensed milk and lime juice and mix well. Fold in the lime zest and ginger and one cup of whipped topping. 

Divide the mixture evenly among the lined muffin cups. Cover pan with foil and freeze until firm, about 3 hours.
